I own a custom domain for my main email provider so if I switch to a new one I won’t have to change all my address for contacting people. I am considering buy a separate domain for just my email forwarding service.
What do people on here do?

domain1.com - for main email
alias.domain1.com - for email forwarding with Addy.io
Option:
domain1.com - for main email
domain2.com - for email forwarding with Addy.io

If you’re using the forwarding subdomain emails for privacy reasons yes a separate domain would make more sense. It’s pretty obvious to tie your TLD to your forwarding subdomain. Either way use whois privacy for your domain registration.
I use 2 separate domains for this reason.
I don’t understand your “problem”. If you have your domain it’s pretty painless to switch providers. You export your mail, import it to your new provider, then change DNS records and you’re good to go.

My system is not ideal, but I have a lifetime deal with Proton Pass for $1 a month that I hope they never change because if they do, I’m getting off of Proton.
Currently, I have a custom domain that I use with Tuta, but I will most likely switch to a provider that is less secure and more compatible with third-party clients after my year of subscription is up.
I also have a decade plus of email history on Gmail that I need to search through all the time and people still send me emails to my Gmail account.
Ideally, I would have a second custom domain for my Proton Pass email forwarding service, so that I’m not giving spammers my actual domain that I care about.
Also, ideally, I would have a self-hosted email server and client setup where I could see all my email addresses, including an archive of all my Gmail history, in one place, and it would sync changes from clients back to the central server. But I don’t know if that exists.
I came up with a domain just for my simplelogin addresses. I see no reason not to unless you don’t want to pay for a second domain.
I haven’t really thought about this before. I have a catchall email that I make up new emails for on the spot, and if it’s something I never expect to need to email them (e.g. newsletters), I’m still using Firefox Relay addresses (@mozmail.com), it’s only $10 a year so I never stopped using it.
I don’t think that there is a need for that 🤔
I haven’t used Addy so I don’t know specific details, but I guess you could forward the emails to addresses with a prefix, e.g.
You can then just use sieve filters to categorise them in the folders you’d like:
The only reason I’ve been thinking that you would need a separate domain, is if you are self-hosting a service like Addy: if websites realize that your domain is used for “random” addresses, your main domain might end up in a blacklist as a spam precaution (whereas with a dedicated forwarding domain, only the forwarded emails would be at risk)
