I try to avoid producing too much manure though.
I think lots of IT people have an extremely limited experience of what it is to produce something.
I mean if opening a ssh hole to the whole world to fuck with is an important part of what they consider “production” - well I’m not really into those types of websites.

Isn’t the whole point of git that the repo is cloned in a million places. You can switch the remote repo really easily?
Maybe i’m wrong; I stopped using github years ago. And I don’t do a lot of collaborative stuff, so I’m happy with just local git + rsync, local backups for most things. Maybe it has loads of unique features I’ve never noticed.

I’m not saying the alternatives are necessarily better for every project. Maybe github really is best for some - but it is a choice of the project to use github. They can move if they prefer the set of features of another repository.
I’m not convinced by anyone using “critical mass” justification for choosing github, that sounds like stockholm syndrome even though you have a key to the door.

what about talking to the relevant GDPR authority?
there should be a clear route of complaint.
start by submitting a subject access request
" what infomation do you hold about me, or that you can link to me?"
“give me a copy”
" what procesing are you doing with it"
" have you shared it? with whom?"
so this process in iself should reveal all processing that they think youve consented to - gives you a basis to challenge.
if they lie to you, that’s anothet offence.
Things like freetube seems to be basically a simple yt front-end.
I don’t know what happens if a significant amount of yt users used freetube. but that probably won’t happen.
I find it a lot more pleasant to use than yt.
